It is one the most beautiful and elegant hotels I have ever seen. Le Domaine is part Abadia Retuerta. It’s a vast project located just a few km from Valladolid in Sardon de Duero. The project began over two decades ago with a winery producing high-quality wines. This winery was rewarded with the Vino de Pago designation a few days later. A strong commitment to sustainability and the protection of the environment has been made in the region. Finally, the hotel was opened in a restored monastery from the 12th century. They celebrated the tenth anniversary by hosting a special dinner for privileged guests.
Le Domaine represents true luxury. It isn’t ostentatious, and it is built on detail, space, and personal attention. It has been a remarkable restoration of the Romanesque monastery. It is a stunning venue for the Novartis collection to exhibit works of art. The space is well-maintained. The peace and tranquility is unsurpassed. The spa is top-notch. The service was impeccable. This is a place where you can lose at least one weekend.
Refectorio is a top-quality restaurant that has been awarded a Michelin star and a green award for its environmental efforts. Marc Segarra’s exceptional cuisine is served in the former monastery dining room. Agusti Peris is the director and sommelier of the Spanish room.
Segarra is committed to the environment and to the local products, as well as to all Castilla y Leon. The map that is displayed in the kitchen shows the origins of all the chefs. There are 35 suppliers within one hundred kilometres of the Monastery. This includes the amazing garden next to the river where the monks had theirs.
Enjoy a guided tour of the estate with its 100-year-old trees, and the many vineyards that run across it. Angel Anocibar, the winemaker, produces the exceptional wines of Abadia Retuerta.
