Fresh every day if you fancy a light and ultragezonde lunch, then a buddha bowl as called. This simple variant, with grilled chicken and fresh vinaigrette puts you without much hassle in a rocker on the table. What do you need? (for 4 persons)
300 g couscous
600 g kippenhaasjes
salt and pepper
1 tbsp chicken herbs
olive extra virgin
250 g cherry tomatoes, halved
1 red onion, in half moons
15 black olives, pitted and cut into rings
1 cucumber, in ribbons, sliced (with a peeler)
15 g flat-leaf parsley, finely chopped
1 tsp mustard
1 tbsp honey
1/2 lemon
this is how you make it:
1. Make the couscous ready in salted water according to the instructions on the packaging.
2. Season the chicken with salt and pepper, and chicken herbs. Add a splash of olive oil and leave to marinate.
3. Heat a grill pan over a high heat and grill the kipfiletreepjes on both sides until done.
4. Make the vinaigrette with mustard with the honey and the lemon juice to mix. Now add, already throbbing, olive oil until you get a nicely bound vinaigrette. Season with pepper and salt.
5. Make the couscous with a fork to dissolve, mix in the flat leaf parsley and divide across bowls. Arrange the vegetables and kipreepjes on and finish with the vinaigrette.
