Heat the milk with the honey, cinnamon, vanilla bean and nutmeg. Do not let it boil, just become hot.
Remove the saucepan from the heat, add the egg yolks and whisk thoroughly in a couple of minutes.
Pour in citrusaft and rome. Season to taste. Pour on the hot copper or glass. Set the cups plastic in the fridge for at least an hour before serving. Garnish with citrusskivor before serving.
