Grimbergen is something else: in Beigem has an artisan bakery, the doors opened instead of closed. The back of a former café was a small bakery has been transformed. The two bakers, service, Didier Baudouin, have their jobs specified for their passion. “High bread, delicious baguettes, croissants and French rolls: you’ll find it becoming increasingly more difficult. We feature now just ourselves-what we all these years have missed.”

Didier Debourg (54) and Baudouin Guyot (58) are the new hot bakers, Beigem. “A hole in the market”, they laugh. But also a fact. “There is hardly a bakery in Grimbergen and certainly not in Beigem. We have our mission to this problem, and so our neighborhood a service.”

Hard job specified

Both gave their job on taking this step. Baudouin was 20 years at the head of a communications and marketing firm. Didier wanted as a 14-year-old or bakery, but ended up in the insurance industry. Nevertheless, blood is thicker than water. “I am cakes and pastries continue to bake,” says Didier, who is his childhood dream still in fulfillment. Also Baudouin bakes for years his own bread. “It is something completely different, in addition, it is still nice also”, say the two 25-year-old friend of his. “Done with screens and computers. Now we are going to bake to our pension…”

Bakers Didier Debourg and Baudouin Guyot

The secret ingredient of the duo? A specific kind of flower from Hollange, both in Belgium and France difficult is available. “Everything starts with good flour, everything stands and falls with it. That flower is produced by a centuries-old mill, a supertraag process. Fortunately, we know the supplier.”

Bakery Boo is still a few days open, but the customers have made their way to the minibakkerij in the Gustaaf De Donderstraat – on the back of an old café – all found. “Everything so far baked, we have sold. Especially the baguettes are a ‘hit’. In four days time we have over 200 people from all over Grimbergen on the floor in our small bakkerijtje. The neighbors are happy that there is another bakery around the corner lives, because until now, they had to to the supermarket or the center of Grimbergen.”
