It’s nightfall. You curl up in front of your TV to enjoy a great movie. Your Smart TV is flooded with a wide range of documentaries, series, and movies. After half an hour, you’re still not seeing anything. Then, you decide to go back and see “The Godfather” again. It’s a classic film that never fails, and you know it is a safe bet. It’s one of those films that never gets old: each time you see it you discover new nuances, aspects you didn’t know before.

Last Monday, while dining at Asador de Castilla, with friends of good letter, I felt a sense of security and comfort. You are certain to succeed. Every item that came across the table was exceptional in quality. Excellent product that was treated with care.

The appetizer is a delicious bite of prawns salad. It’s followed by a salad with a crisp and juicy tomato. Excellently fried fish and tender braised artichokes. While I will admit that I regretted not trying more dangerous things like lamb kidneys and suckling lamb sweetbreads at these gatherings, that’s what I love about them: they leave me wanting more.

My neighbor and I ordered suckling pork to share as a main course. As I have said before, suckling pork is one of those meats you can only eat away from home. This gives them an extra element of celebration and event.

It is also not a common meat in the gastronomic offerings of Granada. It can be found in the low-temperature, traditional Castilian baked suckling pork; it is the same success we spoke of before. The crispy and toasted cover makes the meat tender and delicious. I also ate the piglet’s ear. All in one.

I recall a conversation I did with Antonio Moya (manager of Asador de Castilla), in which he said that if he had to choose between the roast lamb and the suckling pork, as these are the specialties of the house. You can go anywhere…
