Fresh every day, That is the biggest drawback to (christmas)dinners: you post with a mountain of washing up. Except when you’re smart (and ecological!) addresses and your meal in edible bowls serves. What do you think of this witloofsoepje in a hollowed pistolet? What do you need? (for 4 persons)

500 g chicory
50 g shrimps
1/2 stalk leek
1 small floral potato
1 small onion
1 l chicken broth ( 2 kippenbouillonblokjes + 1 l of water)
100 ml cream
2 tbsp chives, finely chopped
4 large white round bread
butter
salt and pepper

this is how you make it:

1. Cut the chicory into pieces and remove the hard core. Cut the onion, the leeks and the potato in small pieces.
2. Stew the onion, the leeks and the potato in some butter. Add the chicory and stir-fry for a while. Moisten with the chicken stock and leave for 20 minutes gently cook. Season to taste with pepper and salt.
3. Mix the soup smooth and stir in the cream below. Put the fire out.
4. Cut the top of the rolls and hollow them out. Pour in the soup and finish with the chives and the shrimp. Serve immediately.
