Every day fresh Soup is delicious, but can also be a bit boring. If your carrot soup is the case, then use this extra seasonings: a piece of ginger, a dash of fresh orange juice and a bunch of thyme. Instant spice! What do you need? (for 4-6 persons)

3 preistengels, in rings
500 g carrots, sliced
3 cm ginger, grated
2 onions, coarsely chopped
1 lovely potato, peeled & diced
250 ml fresh orange juice
3 groentebouillonblokjes
1.5 l of water
4 sprigs of thyme
2 tbsp parsley, finely chopped
splash of cream
olive oil
salt and pepper

this is how you make it:

1. Fry the onion is translucent in olijfjolie. Add the carrot, the leek and the ginger and stir-fry for 2 minutes. Season with pepper and salt. Dissolve the bouillon cubes in hot water and pour in, along with the orange juice, to the vegetables. Add the sprigs of thyme and bring to the boil.
2. Add, as soon as the soup cooks, the potato cubes, put the lid on the pan and leave on a low heat for 20 minutes, simmer.
3. Mix the soup smooth. Let cool completely and freeze in. Thaw the soup in the fridge. Warm again and finish with the parsley and the cream.
