The doctor and biochemist Detlef Schuppan has not eaten wheat himself for more than eight years. No rolls, no pasta, no cake. He avoids wheat because, according to his research, it increases inflammation. Detlef Schuppan: Yes, although this disease was by no means new even then. In the middle of the last century, the Dutch doctor Willem Karel Dicke recognized for the first time that many of the often severe growth and thriving disorders in children at that time were due to wheat: he had established that the condition of these children was namely during the war, when wheat was not only available due to food shortages, but has improved significantly. His subsequent research confirmed that the root cause was wheat, namely gluten.
