Mathias Dahlgren, stjärnkrögaren who runs the acclaimed food bar and grönsakskrogen Rutabaga at the Grand hotel, opens new. On 1 February he opens, together with longstanding colleague Staffan Naess, a French-inspired bistro and wine bar at The Sparrow Hotel, a stone’s throw from Stureplan.
the Goal is, according to Dahlgren to create an authentic French experience, both in terms of atmosphere and food, and the bet includes a bistro, a wine bar and a frukostkoncept.
Mathias Dahlgren has previously run restaurants with inspiration from the Spanish and the nordic cuisine, with a gastronomic philosophy he called ”the natural cuisine”. This philosophy, he must now also apply on the French cuisine.
