I’d like to suggest you make a melon gazpacho this week. It is perfect for summer, but no one would tell you that because of its high price. Start with a traditional gazpacho base. We will then add melon. We serve it with a small skewer, in which we mix some melon pieces with small slices of Serrano Ham. This is a classic combination that never fails.

Ingredients

Half a melon with 1 tomato, 1 green bell pepper, 1 small clove of garlic, 1 teaspoon of apple cider vinegar, 1 teaspoon salt, and 1 tablespoon of EVOO.

Explanation

Combine the chopped tomato, the tomato pieces and the skinless melon in a container. Blend for about a minute, then add the extra virgin olive oil, vinegar, and mix again.
