Every day fresh Pancakes serve for lunch? That you can so just doing this savory wortelpannenkoekjes. Easy to make, very healthy and delicious with some fresh vegetables and salmon. What do you need? (For 4 persons)

150 g flour
4 spring onions, into thin rings
150 g carrots, grated
2 eggs, lightly beaten
400 ml milk
1 red onion, fijngesnipperd
400 g cabbage, grated
2 apples, grated
2 tablespoons sour cream
2 tbsp mayonnaise
400 g smoked salmon, in strips
bunch of coriander
40 g pine nuts, toasted
butter
salt and pepper

this is how you make it:

1. Mix the red onion and the apples under the cabbage. Add the sour cream and mayonnaise and season with pepper and salt. Put cool.
2. Mix the flour with the grated carrot, spring onion and a snuf salt and pepper. Beat the eggs and the milk. Grease a pan with butter and fry pancakes of the batter.
3. Place 2 crepes on a plate, scoop a spoonful of coleslaw and finish with the coriander, strips of salmon and pine nuts.
